Tandem EVOOs from 2017-2018 campaign are recognised by the Denomination of Origin of Sierra Cazorla, an official stamp which certifies olive oils with singular qualities, typical of olive trees that grow in the cradle of the Guadalquivir river and in the heart of the Natural Park of the Sierras de Cazorla, Segura and Las Villas.

TASTINGS AND MATCHINGS
Emotions, step by step
Pour a desired amount of EVOO into a suitable glass, warm up in your hand to reach 28°C and cover the opening to avoid losing any aromas.
After that, uncover and inhale taking short breaths through the nose to smell the aromas (this should be carried out for a maximum of 30 seconds).
Next, to examine the taste of the oil, take a small slurp and distribute it evenly in the mouth (covering all of the tongue, including sides), and let it reach the back of the palate and the throat. Very small amounts of oil need to slowly reach different areas to be able to perceive the range of notes.
Royal: Fruity green notes in the nose. Lightness without bitterness on the palate.
Soft taste with intriguing sweet notes.
Picual: oil with a strong personality. Fruity and fragrant. Pleasant and slowly fading peppery and astringent taste.
Intriguing fig and fresh wood notes.
Arbequina: This olive oil boasts an exquisite flavour with a characteristically clean aroma, taste and smell of almond.
Interesting distinguishing notes are present.
Coupage: This olive oil is expertly created by a master with the aim to produce a unique and attractive EVOO through the perfect blend of different varieties, showcasing their noble characteristics.
